When Mr. Adolfo Avalos was 12 years old. He went to Nazca and met the
Parinacochas trio. They played the guitar every night. He fed the pigs and walked whole days in the fields. He asked for his aunt Alejandrina Champa, but his stepmother didn´t let him go, until one day he put on his mother´s skirt, which caused an argument and he ran away.
After looking for his aunt for 1 month he found her at work, the hacienda Cahuachi. The owner was Juy Juy, a Chinese. He stayed there some months and was sent to another hacienda, where there was a cook named Yau Yo. He was good at his job, but he was a gambler. He loved playing poker. The other cook was Alfonso Wong, who was a bad man. He made him get up at 4 am to look after the pigs.
After, he went to the hacienda of Santiago Lui San, a very good person. Every day he went shooting with his rifle and practiced martial arts. He was there until he was 18. He went to Ica from there with Lui San. There was a Chinese restaurant next to the market in Ica. Lui San talked with the owner and left Adolfo temporarily to learn to cook.
Lui San didn´t have a place to have Adolfo, so first after 6 months he was able to take him to Lima. Lui San sent him to the Cullinary institute in Paruro street, now a home for the elderly. Adolfo learned cullinary arts at this big school and he worked at the Chinese restaurant Li Nan, to pay for his studies. He met a lot of Chines working and studying there.
He worked at banquets for the presidents Odria and Belaunde and in a lot of Chinese restaurants. There he mastered cooking with woks, in which he was very fast…
The 20th of July 1969 Adolfo Avalos arrived in Cusco. He started worked, a seafood restaurant that was 1 year old (1968). He worked there for a year and a half. Then the others restaurants asked him to work for them. He had worked in some Chinese restaurants in Lima, so they wanted him to teach how to prepare Chinese food to their staff. Adolfo Avalos initiated the Chinese cuisine in Cusco. All other Chinese restaurants were started by his apprentices. Many restaurants were opened from that time, but with a different style. After working half a year in the other restaurant he opened The Dragon in Plateros street. That was the base for many other restaurants.
It is so in the year of 1993 of February 18, CHIFA RESTAURANT GOLDEN DRAGON was reopened in this opportunity the last of Mr. Adolfo Avalos Champa and of Mrs. Marina Ayquipa Luggage racks, takes the post as well as the responsibility of continuing with the mentioned author's of so praiseworthy work.
